Poha

Instructions

Step 1

Take 1 cup thick poha (flattened rice) and rinse it gently in a colander under running water. Let it sit and soften for 5–10 minutes. Meanwhile, chop onions, green chilies, and fresh coriander.

Step 2

Heat 1–2 tablespoons oil in a pan. Add mustard seeds, cumin seeds, curry leaves, and a pinch of hing (asafoetida). Let them crackle. Then add chopped onions and green chilies. Sauté until onions turn translucent.

Step 3

Sprinkle turmeric and salt into the pan. Mix well. Add the softened poha and stir gently to coat it evenly. Cook for 2–3 minutes on low heat. Add roasted peanuts and a squeeze of lemon juice.

Step 4

Turn off the heat. Garnish with chopped coriander and optional grated coconut. Serve warm with a side of chai or curd.
